You need to log in first. Then use the my preferences link in the upper right hand corner of any wiki page. Once you're on that page, check the box labeled E-mail me when a page I'm watching is changed. Now you can go to a specific page and click on the watch 'tab at the top of the page. There are a couple of pages like the Support FAQ and the How To page that link to a lot of other pages so watching these pages would be highly recommended.

It appears that watching the Contents page isn't a very good idea. While it does change automatically every time a new article is added to an existing category, this doesn't get reported as a page change to the watch system.
